This Chicken Tetrazzini Recipe is like a chicken-themed macaroni and cheese recipe.

Ingredients

  • 12 ounces extra-wide egg noodles (340 grams), You can substitute a package of regular spaghetti or linguine pasta
  • drizzle of regular olive oil to prevent noodles from sticking to each other, You can substitute 1-2 tablespoons unsalted butter
  • ½ cup unsalted butter
  • 2-4 chicken breasts (1-2 pounds chicken) cooked and diced, I use 1 pound usually but you can do 2 pounds to make it more protein-packed
  • 2 cans (10.5-ounce cans/298 grams) condensed cream of chicken soup
  • 2 cups sour cream or plain Greek yogurt in the same amount, I used full-fat yogurt but you can substitute non-fat if you wish
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh ground black pepper, plus more for serving
  • ½ cup chicken broth
  • 2 tablespoons shredded Parmesan cheese, plus extra (3 tablespoons) for topping
  • 2 cups shredded Mozzarella cheese, plus extra (3 tablespoons) for topping
  • ¼ cup fresh chopped parsley, for serving

  • 2 cans condensed cream of chicken soup, (10.5 ounce cans/298 grams)
  • 2 cups sour cream or plain Greek yogurt in the same amount, I used full fat yogurt but you can substitute non-fat if you wish
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh ground black pepper, plus more for serving
  • ½ cup chicken broth
  • 2 tablespoons shredded Parmesan cheese, plus extra (3 tablespoons) for topping
  • 2 cups shredded Mozzarella cheese, plus extra (3 tablespoons) for topping
  • ¼ cup fresh chopped parsley for serving

Instructions

  1. Grease a 9 x 13-inch casserole dish and set it aside.
  2. You can prepare the chicken breasts by boiling them for 25-30 minutes, allow to cool, and cut into diced pieces.
  3. Preheat oven to 350 degrees F.
  4. Cook noodles according to package directions. Set aside. You can drizzle with regular olive oil or 1-2 tablespoons of unsalted butter to prevent the noodles from sticking to each other.
  5. In a large mixing bowl, combine ½ cup unsalted butter, cooked and diced chicken, condense cream of chicken soup, sour cream or Greek yogurt, kosher salt, pepper, both kinds of cheese, and chicken broth. Add in the cooked noodles.
  6. Spread mixture evenly into the prepared pan and sprinkle 2 tablespoons of each cheese evenly over the top. Bake for 40-45 minutes.
  7. When it's done, allow cooling for 5 minutes. Sprinkle with fresh chopped parsley and enjoy!
