We made as written except we used triple cream brie and red wine vinegar. Outstanding! Beautiful presentation and could not have been easier. It's more filling than expected, and we'll eat it next time as an entree.

I detect much potential here - throw in some Brussel sprouts or dried cherries for some sweetness, or maybe some candied pecans or halved grapes. Or keep it full savory and add a handful of watercress. We're having this with pan seared steak and crispy roasted potatoes tonight! It's excellent.

Delicious! I’d go a smidge heavier on the vinegar and honey next time. Really great with the crusty bread. A perfect “gather around” dish.

This was wonderful! Low effort, high reward. I made it exactly as written, with Supreme brie. I can already tell this will be my go-to the next time I spot a soft cheese or some winter lettuce, and want to make something of it.

Carol

Didn't have radicchio so used 3 Belgian endive, halved lengthwise. Raspberry vinegar by accident. Just a little honey. 2-3 oz taleggio cheese. Plated on greens. Excellent.

Shelli

So so SO good. If it’s too bitter for you, just add more honey. I could eat this every day. I have never encountered a recipe with such few ingredients for a whole meal that literally takes 5 minutes to make, from prep to finish. I usually just have the salad alone without bread, but next time I might try it with a homemade slice.

anyushka

Made this with robiola. Absolutely to die for.

Here in Central New York I have not found radicchio for sale for some time now. Is there some explanation for this scarcity? Radicchio is one of my favorites raw or braised.

Western Winnie

This was excellent and even radicchio-ambivalent husband said “mmmm!”Although radicchio is one of my favorites, and I happily eat it in salads, I bought some that was so bitter it made my eye twitch and this recipe was an ideal foil to because it perfectly balanced umami, salty, sour, bitter, and sweet. I think you could also use leftover bits of holiday cheeses or fromage fort.

Made for Matthew. Was really beautiful food and evening! Certainly a recipe to get the best of all ingredients for.

cindy

Added a cup of roasted red grapes for contrast. Delicious!

Kate

Also a small handful of chopped walnuts

Bitter but delicious, so decadent!

I agree with others that it needs more time for cooking and the cheese should be melted more, not just placed in the pan at the end. I also agree that the radicchio was a bit too bitter. Overall I would say just okay.

Woof

When I tried this the radicchio reeked of wet dog and the longer I cooked it the worse it got. My whole kitchen stinks. I've never cooked radicchio so maybe this is just how it is? I have no idea. I wanted to like this and I might try it with brussels sprouts or chard but good lord what a stench.

Joan

Absolutely delicious and as another reviewer stated, very filling. Could be used as a lunch dish. Pressed a little fresh garlic on top of the radicchio as it cooked and used balsamic vinegar. Definitely will make again.

Question…not a fan of bitter greens. Can I substitute romaine lettuce for radicchio?

Cari’s alterations

Delicious! I didn’t Ave any sherry vinegar, so used a little white wine vinegar, and a drizzle of black garlic balsamic. Local Sweet Grass dairy Green Hill soft ripened cheese. Just yummy!
