Fluffy corn fritter, packed with the goodness of crunchy, sweet corn. They come together quickly, ready for your choice of topping.

Corn fritters are one of my favourite homemade breakfast recipes because they're healthy and filling. I tend to make them when I'm trying to eat a lean and healthy diet. To keep these healthy I use a non-stick pan and either no oil or just a tiny drop. You can also cook them in a sandwich press with no oil at all.

I am always disappointed when I order corn fritters at a cafe because they have been deep-fried and are greasy and gross!

In the past, I have made this recipe by hand, so if you don't have a Thermomix, don't worry, I will put the instructions below.

How Thermomix makes a Corn Fritter Easy

I'm a lazy cook so I've modified the corn fritter recipe so it can be made in the Thermomix. The changes are minor but they are labour saving.

  • Thermomix does the chopping of the onion! WIN, no more tears!
  • The corn batter is combined in the Thermomix quickly and efficiently.
  • The TM jug makes it easy to pour the batter straight from the jug to the frying pan. No mess!

Serving Your Corn Fritter

There are so many different ways to serve your fritters. Take a look below;

Breakfast or Brunch Ideas

  • On the side of the plate with bacon and eggs instead of toast.
  • As part of a vegetarian stack. Layer 2-3 fritters with avocado, tomato relish and sour cream.
  • A lean, healthy stack 2 fritters topped with feta or homemade ricotta, roasted capsium and rocket drizzled with balsamic dressing.

Lunchbox Idea

If you're not a breakfast or brunch person these are equally delicious for a packed lunch.

  • served with a big salad and dressing.
  • since my daughter became a vegetarian I have started making her a "corn fritter burger" for lunch. The burger consists of a corn fritter patty, then I add tomato, lettuce and beetroot to a burger bun with some tomato relish, avocado and sour cream.

Corn Fritters by Hand

  1. Finely chop onion and add to a large bowl.
  2. Add all remaining ingredients and stir until completely combined.
  3. Heat a frying pan with oil.
  4. Drop batter onto the hot pan and turn when required.
  5. Serve.

Can you freeze corn fritters!

Absolutely they can be frozen. Just make sure to freeze them singularly so they don't stick together.

Can you reheat the fritters in a microwave?

Yes you can, they will be very quick to reheat so start with just 20 seconds if they have come out of the fridge.

What if I don't have corn?

You can sub the corn for peas or cubed ham, the batter is ver versitle so whatever you have in the fridge will be good.

Will frozen corn work?

Yes, frozen corn, or a pea and corn mix can be substituted for the canned corn.

How do I get crispy fritters?

Crispy fritters is achieved by adding a centimetre of oil to the pan for frying. The fritters become crispy by soaking up the oil as they brown.

Thermomix Corn Fritter Recipe

These corn fritters can be made even leaner by cooking them in the sandwich press without oil.

Equipment

Ingredients

  • 110 gm red onion cut in ½
  • 150 gm skim milk
  • 3 eggs
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 160 gm plain flour
  • 2 teaspoon baking powder
  • 800 gm can corn kernels (drained)

Instructions

  • Place the onion in the TM bowl. Chop 5 sec/Speed 5.

    110 gm red onion

  • Scrape down the bowl.

  • Add the milk, eggs, salt and pepper to the onion mixture. Combine 5 sec/Speed 3.5.

    150 gm skim milk, 3 eggs, ¼ teaspoon salt, ¼ teaspoon black pepper

  • Add the flour, baking powder and corn to the TM bowl. Combine 1min/Speed 3.5 (Reverse blade).

    160 gm plain flour, 2 teaspoon baking powder, 800 gm can corn kernels

  • Heat a non-stick frying pan or sandwich press. There is no need to use oil but you can use a small spray of oil if desired.

  • Add 4-5 fritters to the hot pan and cook until bubbles appear on the top.

  • Flip each fritter and cook through.

  • Repeat until all the batter is cooked.

  • Serve with cottage cheese and a slice of ham or smoked salmon.

Notes

Corn Fritters also make a fabulous cooked lunch. They can also be frozen and heated in the microwave.

Notes:

1/ 800g is the weight of the can of corn before it is drained.

2/ Oiling the frying pan is optional if you are using a non-stick pan. Any other pan should be given a light spray of oil before each batch of corn fritters.

      It doesn't need to be skim milk but I was making this recipe as a low calorie version. That's also why I haven't deep fried them 🙂

    Loved these. So easy for a quick lunch. I added chopped ham and grated cheese. Kept them warm in thermoserver with baking paper between each while I made next batch👍
