These are the holiday food ideas and recipes we suggested on Shop Smart Save Money this week.

One of our favourite things to do is travelling! We have a long bucket list so we will never stop! And on the journeys, one of our favourite things to do is to check out the cuisine of the places where we stay.

So, when we got the chance to suggest and cook up some holiday food ideas and recipes inspired by other cuisines, we jumped at the opportunity and here’s what we came up with:

Holiday food ideas and recipes for Kelly, Hendry and family

  • Thai Fish Cakes
  • Japanese Katsu curry and rice

Get those flip flops on jet setters and let us go on a tasty adventure.
First, stop Thailand for an aromatic feast of THAI FISHCAKES. These savoury cakes are to die for and you won’t want to leave this flavour heaven.

But alas you must pack your cases and let us go to Japan to sample JAPANESE KATSU CURRY. To fork or not to fork now that is the question. Whether you choose to use fork or chopsticks or even your fingers, you will not be able to resist this tasty Japanese sweet curry with rice that will absorb the thick curry sauce. It will really make you drool for more!

Next stop on this adventure is the streets of Italy for this popular street food CALZONE. This is pizza wrapped in its own edible packet. Imagine your favourite pizza toppings. Choose them and stuff them in. Enough meat! This one will be a veggie version with the really meaty texture of shiitake mushrooms and the oozing goodness of mozzarella. You really won’t miss the meat one bit.

Now, where would you like to go next? If you can dream it, you can achieve it and taste it. The world is your oyster! And what is even better (and more frugal) is that you can actually find the recipes and make the foods yourself!

Nandos style meals

Calzone Ingredients

Ricotta cheese
1/2 tsp Cayenne
1 egg
3 tbsp grated Parmesan
115g sh*take mushrooms, sliced
1 red onion, sliced
Fresh basil
1tbsp balsamic vinegar
Mozzarella
1 tbsp sugar
7g yeast
500g bread flour
2 tsp salt
3 tbsp olive oil
300 ml of warm water
4 tbsp passata

Method

Make pizza dough by mixing together flour, salt, yeast and sugar in a large mixing bowl.

Make a well in the centre and pour most of the water in. Hold a little back in case it is not needed.

Mix ingredients together to form a soft but. Not sticky dough. Knead well and cover the dough in the bowl with cling film or a clean, damp, towel.

Leave to rise until double in size.

While the dough is rising, prepare ingredients for the filling:

Chop mushrooms, slice the red onion.

Sauté onions in olive oil until caramelised. Add balsamic vinegar and shiitake mushrooms until softened

Add 4tbsp passata and season with salt and pepper. Remove from heat.

Slice the mozzarella

Retrieve the dough and knock back the air out of it. Knead gently and divide into five equal pieces.

Roll each piece into a thin circle on a lightly floured surface.

Spoon the mushroom and onion filling onto half of each circle. Leave one cm border around the circle. Add cheeses and fresh basil to each.

Damp the edge around the circle with some water. Fold the empty half over the filling and pinch the edge closed.

Brush with beaten egg and pierce the tops to allow hot air and moisture to escape.

Sprinkle with freshly grated Parmesan, remove to a baking tray that has been sprinkled with cornmeal.

Bake for 10 to 15 minutes until golden brown

Cool for 10 minutes before serving

Thai fish cake with cucumber and lemon garnish and sweet chilli dip

Ingredients

200g skinless boneless white fish
200g skinless boneless salmon
25g red curry paste
1 red chilli
1 thumb size piece of ginger
4 cloves garlic
1 tablespoon fish sauce
2 Spring onions
2 eggs

For the garnish

1 cucumber
2 limes/lemons
1 bottle sweet chilli dip

Method

Peel ginger. Chop pepper. Peel garlic. Add to food processor and blitz.

Cut spring onions and set aside.

To the food processor, add all other ingredients and blitz to get a fish paste.

Season then put in a large bowl.

Add the chopped spring onions and combine by hand.

Divide into balls and shape in the palm. Fry lightly on both sides until crispy and golden brown.

Serve with a garnish of cucumber and lemons/limes along with sweet chilli dip.

Chicken katsu curry with rice

Ingredients

3 chicken breasts
1 onion, finely chopped
1 thumb sized piece of ginger, peeled and chopped
2 carrots
2 cloves garlic
1 chopped chilli
2 tsp medium curry powder
1 tsp garam masala
1 tsp turmeric
2tbsp flour
2 tsp soy sauce
1 chicken stock cube
500ml hot water
2 tsp honey
1 egg
100g breadcrumbs
Salt, pepper
Sunflower oil for frying

Method

Place chopped onions in hot oil and sauté along with garlic and ginger.

Continue to soften and then add curry powder, garam masala, turmeric and flour. Stir to form a paste.

Add the stock cube to hot water in a measuring jug.

Start adding the chicken stock a little at a time until all has been used up.

Add chopped chilli, honey and soy sauce.

Simmer gently for 5 minutes.

Remove from heat and blitz

For the chicken

Place chicken breast pieces between two pieces of cling film and bash to flatten with a rolling pin.

Season the chicken with salt and pepper

Prepare one plate with flour, one with beaten eggs, and one with breadcrumbs

Coat breast pieces in flour, then beaten eggs and then breadcrumbs,

Fry each piece in oil until golden on the outside and any juices run clear.

Slice chicken into strips before serving

Cook two cups rice in 4 cups salted water. Allow simmering covered once it starts to boil. Do not stir.

Remove from heat once all the water has evaporated

Salt, pepper
1 chicken stock cube

1 bottle balsamic vinegar
Grated Parmesan
Mozzarella
Ricotta cheese
Sugar
500g bread flour
Passata
1 sachet yeast
Olive oil
Cornmeal
Curry powder
Garam masala
Turmeric
Plain flour
1 bottle of soy sauce
Chicken stock cube
Breadcrumbs
Basmati rice
