I never really mentioned that I picked 14 lbs. of Blueberries this Summer! LOL It might seem a little absurd to pick so much, but we use them in everything ALL Fall and Winter long. I LOVE making all kinds of homemade bread recipes like in this Blueberry Lemon Quick Bread Recipe! Blueberries have HUGE health benefits and every time I add a little here and little there, I honestly notice a boost in our immune system and energy.

Blueberry Lemon Quick Bread
Blueberry Facts you may not know:
- Blueberries are loaded with potassium, folate, vitamin C, vitamin B6 and phytonutrients
- Blueberries are POWERFUL antioxidants and help fight off such disease’s as Cancer, Heart disease, Diabetes.
- Blueberries have tons of Fiber, so it helps lower cholesterol and helps to keep you fuller longer (think weight control) along with keeping a healthy digestive track.
Ok enough of the boring health facts…
This very simple Blueberry Lemon Quick Bread recipe uses very simple ingredients and is deelish!
Ingredients:
- 2 Eggs
- 1 1/2 C Sugar
- 2 Tbls Oil
- 1 C Milk
- 1/4 C Unsweetened Applesauce (this cuts down on the oil that is needed)
- 3 1/2 C Flour
- 3 Tsp. Baking Powder
- 1 Tsp. Salt
- 1 ~ 2 Cups Blueberries
- 2 Tbls Fresh Squeezed Lemon (more if you want more Lemon)
- 2 Tsp. Lemon Zest
I just bought a new Silicone Bundt Pan and have used it a couple of times since making this recipe! Can I just say…LOVE!

I’ve kind of turned into a Silicone lover when it comes to cooking utensils! They are so easy to clean (the easiest) and can stand up under high heat!
By the way, I did a lot of research before I started using Silicone Utensils and Bakeware. Silicone is perfectly SAFE. Although I wouldn’t just leave like a Mixing Spoon sitting in a boiling kettle…but then I wouldn’t do that with ANY Mixing Spoon or utensil 🙂

&Directions:
Stir together the dry ingredients…Sugar, Flour, Baking Powder, Salt
Stir together wet ingredients…Milk, Eggs, Oil, Applesauce, Lemon juice and Zest.
Mix together wet and dry ingredients…don’t over stir.
Then gently fold/stir in Blueberries
Tip: I like to add partially frozen Blueberries because they are easy to stir without having them all break up and turn the whole batter blue. Although that’s not a bad thing!
Now pour into a Bundt pan or use 2 loaf pans that have been sprayed lightly with cooking oil.
Bake @ 350 degrees for 50 – 60 minutes. Check the doneness by golden brown and poking with a toothpick. If it comes out clean, it’s done. (some may not know this old fashioned trick)
