1.Rinse chicken and pat dry. Season on all sides with salt and pepper. Heat oil in a heavy cast iron pot or dutch oven, drizzled with olive oil. Cook chicken on all sides until nicely browned, about 10-12 minutes. Remove chicken and transfer to a shallow plate, set aside.

2.In the same pot, add the sliced onions and mushrooms to the pot. Increase heat to medium-high.Cook until the onions are translucent, and the mushrooms have given up most of their moisture, turning and stirring frequently for about 10 minutes.Add the garlic and cook a minute more.

3. Add the wine to deglaze the Dutch oven and scrape up any browned bits at the bottom. Simmer until the wine hasreduced by half. Add tomatoes, crushed tomatoes, chicken stockand stir in Italian seasoning, basil, parsley, thyme, and crushed chili pepper. Adjust seasoning with salt and pepper. Simmer uncovered for another 5 minutes.

4. Add the chicken back to the Dutch oven on top of the tomatoes and onions. Lower the heat and cover the dutch oven with the lid slightly ajar.Cook on a low simmer, turning and basting from time to time, until chicken is tender, about 40to 50 minutes, until the meat is falling off the bone. Garnish with basil, parsley and fresh thyme and serve immediately over pasta.

  • You can add chopped green or Kalamata olives as well as red peppers for even more flavor.

FAQs

What cooks best in Dutch oven? ›

No matter the style or size, any Dutch oven will open up endless recipe opportunities. Create beautifully braised meat, pot roasts, hearty beef stew, healing chicken soup, or the creamiest mac and cheese. Use it like a slow cooker, a bread cloche, or a pot for frying.

Is there anything you shouldn't cook in a Dutch oven? ›

In an enamel-coated Dutch oven, prolonged cooking with acidic ingredients may discolor the interior coating but doesn't erode it. The bottom line is, if using a seasoned cast iron Dutch oven with highly acidic foods, ensure the pot is well seasoned and limit cooking to short periods.

What is so special about Dutch ovens? ›

What makes Dutch ovens (also sometimes called French ovens) so enduring is their versatility. The sturdy build helps store and maintain heat, the heavy lid traps condensation and allows for more efficient heating, and the single-piece construction means Dutch ovens move easily between the cooktop and the oven.

Do you leave the lid on a Dutch oven in the oven? ›

You may need to take the lid off part way through the cooking process. However, some recipes may call for the lid to be off from the beginning, so consult your recipe. If the lid is not oven-safe, you'll need to leave it off no matter what. Tip: Most Dutch ovens come with oven-safe lids, but not all do.

Do you cover a Dutch oven when baking? ›

It doesn't matter if you use an enamel-coated cast-iron Dutch oven or a traditional black cast-iron Dutch oven. As long as you have a lid to cover it, the bread comes out perfectly every time.

Do professional chefs use Dutch ovens? ›

And while there are plenty of sizes to choose from, like oval Dutch ovens, or shallow Dutch ovens, Cimarusti prefers the classic Le Creuset 5.5-quart Dutch oven. “The attention to detail is just great,” he says. If a Michelin-starred chef uses one everyday, it's worth adding to your kitchen.

What is the difference between a Dutch oven and a cast iron Dutch oven? ›

Raw cast iron needs to be seasoned to make it nonstick and rust-resistant, while enameled Dutch ovens are somewhat nonstick and protected out of the box. High-quality enamel coatings are expensive, which is why enameled Dutch ovens cost more than their standard cast iron counterparts.

What cannot be cooked in enameled cast iron? ›

4 Foods You Shouldn't Cook in Cast Iron
  1. Acidic foods (unless you make it snappy) ...
  2. Fish (particularly delicate varieties) ...
  3. Eggs. ...
  4. Skillet brownies (if you just fried a batch of chicken last night) ...
  5. A lot more (if your skillet isn't properly seasoned)

Why does everything stick to my Dutch oven? ›

Using it on very high heat.

The pot can scorch if it's this hot and food can burn and actually stick to the surface. Cooking at medium heat is more than sufficient for the pot. Follow this tip: Always cook on medium or low heat, even when frying or searing.

Can I put a cold Dutch oven on the stove? ›

Try removing your dutch oven from the refrigerator and setting it out at room temperature so it can begin heating. Once your dutch oven is no longer cold to the touch, you can gradually heat it on the stovetop or in the oven.

What is so special about a Le Creuset Dutch oven? ›

It produces high-quality cast iron pieces, meaning they retain heat well, and they're coated with enamel, which makes cleanup very easy and enhances the variety of rich colors Le Creuset offers.

What was the point of a Dutch oven? ›

A Dutch oven is, in essence, a big pot with a lid designed to let very little steam escape. (This is useful when you're braising or stewing something and don't want a lot of evaporation.)

Can a Dutch oven go on a stove? ›

You can use a dutch oven on any kind of cooktop, including induction, as long as the dutch oven is cast-iron or another induction-compatible material. When you are using the dutch oven on a direct heat source, just make sure that the temperature does not get too hot and scorch it.

How many people will a 3 quart Dutch oven feed? ›

If you live alone or only cook for one or two people, a 3-quart Dutch oven should do the trick for most dishes. That said, we'd still recommend going larger for more versatility.

Can you bake bread in a 3 quart Dutch oven? ›

Can I cook bread in a smaller Dutch Oven? If you already own a smaller Dutch oven, like this 3.5-quart Mini Dutch (or you think 5.5-quarts is a bit much) then good news! You can still cook all the bread recipes that were written for a larger Dutch.

What is the Dutch oven method? ›

This cooking technique essentially transforms rough cuts of meat into tender final dishes using wet and dry heat over a long period of time. The Dutch Oven works very much like a braiser, locking in heat and flavour with its tight-fitting lid and thick and high walls.

What temperature can you put a Dutch oven in the oven? ›

Dutch oven recipes often require a cooking temperature of around 325°F to 375°F in an oven.
